You do not need to know every sheet material to choose well. Start with what the part should do: support, bend, protect, present or primarily look good. That already narrows the options.
A construction, visible part or packaging?
For construction, consider stiffness, joints and weight. For visible parts, colour, surface and cut edges matter. An insert needs support and accessibility. Wood, MDF, acrylic, cardboard and foam each answer different questions.

Where will the part be used?
An indoor sheet has different needs from an outdoor sign. Consider moisture, cleaning, heat and loading. Use actual product properties: the general names plastic or wood are not enough.
Choose thickness
Look at size and support. A large freestanding part differs from a small fully supported piece. Actual sheet thickness matters for slots and joints.
What do you still need to check?
A material sample helps with colour, texture and gloss. Fit, stability and engraving need a prototype. Select one variant, test the important details and use the findings in the next version.
